Red Pepper, Onion, and Goat Cheese Frittata

This week we pay tribute to mother's day by making a frittata!



Frittatas are awesome because they're simple to make but still a classier gesture than the usual breakfast omelette. Start by choosing some of your favorite ingredients and herbs. Cook them in a pan, add your eggs, then finish in the oven. 

In our case we used a classic combination of goat cheese, onion, and red pepper. We also added meat because, well, meat. Recipe here: http://www.bbcgoodfood.com/recipes/4724/

Dan's Version and Comments

Dan used pancetta.
Pancetta fat was saved to cook the eggs. Nice.
Red onions, pepper, and rosemary.

The recipe called for cooking over the stove then finishing in the broiler. Dan just baked the eggs at 300C. The recipe is flexible, so that will probably work as well. 
Top with goat cheese. Mmm

Today was all about the moms. Sadly I was over 100 miles away from mine, sigh. Frittatas, or fancy eggs, are unique, they are essentially one of the few foods you can add virtually anything to and are therefore a great way for people who are new to the kitchen to get their feet wet.

Although the recipe called for red onion and peppers, I got a little crazy, YOLO. I added some rosemary, garlic, scallions and pancetta, and the key ingredient, I used the fat that cooked off from the pancetta and mixed it in with the eggs, so sue me, I just got my cholesterol checked. 

Overall, not my favorite meal, but sometimes you have to be selfless and make the foods your mother's love. Stay tuned, the next two weeks I will have free reign over the meal selection process. 

Mo's Version and Comments

Few ingredients needed.
Used a coarse chop. Wanted some bite to the frittata and figured they would soften nicely.
Added lean turkey sausage. Gotta keep it healthy for mom!
Veggies softened. 
Add a splash of milk to the eggs. Will make them fluffier.
Used Spanish (aka smoked) Paprika instead of the usual stuff.
Toppings ready.
When the eggs are setting but still a bit runny dot them with goat cheese and rosemary.

Very tasty. The goat cheese and rosemary worked really well together.  

This is a great cooking technique to learn. Use it whenever you're serving brunch for guests or loved ones. The most fun part of frittatas is experimenting with different flavors. Try mixing and matching with ingredients like cheddar, ham, spinach, peppers, tomatoes, leeks, chorizo, asparagus, chives etc. Have fun with it.
