Citrus Glazed Chicken and Carrots


This week, Dan keeps it light and simple with citrus glazed baked chicken and carrots. Honey and carrots for sweetness, lemon for acidity, and paprika for some smokiness. 


Recipe:

Citrus Baked Chicken with Glazed Carrots

Ingredients: 5 oz raw chicken breast
1 tsp extra virgin olive oil 
2 Tbsp fresh lemon juice
1/2 tsp paprika
Sea salt and fresh ground black pepper for taste
2 medium carrots, sliced, cooked, hot
2 tsp of raw honey

Directions:
1.) Preheat oven to 375 degrees
2.) Place chicken in small, ovenproof dish
3.) Drizzle with oil and lemon juice, spring with paprika, season with salt and pepper if desired
4.) Bake for 15 to 20 minutes or until center is no longer pink and juices run clear
5.) Drizzle carrots with honey
6.) Serve chicken with carrots on the side

For a 400 calorie meal, add 1/2 cup of brown rice

First off all, my apologies to our loving food blog fans. I recently started the Insanity workout routine, and this meal is obviously a result of that. Nonetheless, the meal was not all that bad. The chicken was incredibly juicy and moist. The honey combines very well with the acidity of the lemon to give it a sweet-tangy flavor. The paprika adds a considerable amount of smokiness, even when using a small quantity. If you are cooking chicken in the oven, use a grill rack to cook it evenly. Also, if you are going for the BBQ feel without actually barbecuing it, put it under the broiler for a few minutes.  

My side dishes were carrots, which I drizzled with a little bit of honey. For the spinach, I sauteed some green onions, red onion and garlic and then combined that with the spinach. 

Overall, I'd give this dish a 5 for taste, but a 10 for healthiness.

Line your dish with foil. Makes clean up near effortless.
Onions
Peel carrots, cut in chunks.

Had some leftover sage- always goes great with chicken.



Spice mix. Paprika adds great color to the chicken.
Lemon and spices added.


This is nothing fancy but still a very easy, light, and flavorful dish. Sometimes simple is good, you know?

Great dish to have as leftovers. Baked lemon and soft carrots add nice sweetness. Make sandwiches, salads, or eat with brown rice for guilt-free lunches all week.
