Clams Casino


Clams Casino: a classy appetizer that even James Bond would enjoy. 

In short, these are clams topped with a mix of breading, Parmesan, onions, peppers, and parsley. This is broiled to perfection and topped with crispy bacon.

Dan's Comments

Not only was this a great dish, but I was able to enjoy it in great company. While the star of the show for this dish is the clam, it is really the bread-pepper-parmesan topping that kills it. Also, did I mention that there is bacon in this dish?

Originally I was somewhat hesitant to make this dish. Clams are a tricky thing and more so without a shuck. Despite my initial fears this dish is actually quite simple to make. I recommend preparing it for any large gathering (Superbowl?).

Here are my recommendations for this dish:
1.) Do not fear the green stuff inside the clam.
2.) The juices that drip off during the clam's initial trip to the oven should be saved. Add these juices to the topping.
3.) Buy a shuck.

Throwing a classy get-together? Then this appetizer is sure to be a hit. Don't be intimidated by this recipe. For something so incredibly tasty, it's actually quite simple to make.

Be sure to season well. Serve with lemons over rock salt if you want to go the extra mile.
