Almond Flour Chocolate Chip Cookies


Are you nuts for cookies? Then you'll love these almond flour cookies.

This super simple recipe uses almond flour, which has a subtle nutty flavor and an impressive amount of protein and fiber. Baked with chocolate chips and walnuts, these may just end up being your go to cookie recipe.

These cookies were alright, but not my favorite. The recipe, in my opinion, could use a little more butter. When you bite into a cookie it should be less airy and more soft, gooey and slightly doughy. This cookie really only captured the soft component. The cookie could have used some more vanilla. 

All in all, I really am at a loss for words. The cookie was mediocre at best, lacked substantial flavor, and was more or less generic. To spice it up, I melted the chocolate chips in a makeshift double boiler. This seemed to spice up what was otherwise a rather plain cookie.

Humbly disagreeing with Dan, I believe these cookies are fantastic. It's impressive how chewy and tasty they are given how simple they are to make. The recipe is perfect as is, so don't change around too many things. 

Some important tips:
-Use a flexible silicone sheet- cookies will slide right off
-Hand roll and press the cookies before baking. Unlike regular flour cookies these do not smooth out and flatten through the baking process
-Walnuts and chocolate chips are great here. Coconut flakes and other toppings would work well too
-Top the cookies with chocolate chips for aesthetics
-Eat warm, preferably with milk
